spirits shrinkage

Basic operational standards can have an immediate impact on your margin and profitability; an empty bottle is not empty when there is liquid remaining inside!

These three bottles, one whiskey, one bourbon, one gin, were all taken from a bottle bin in a new customer of ours this week. Easily 20mls / 25mls thereabouts left in each one heading out to recycling.

In a standard 700ml bottle of spirits there are 19.7 regulation pub-size measures (35.5mls) of alcohol; if your team are wasting 25mls per bottle used (3.6% of the content) your business will lose 1 full 700ml bottle for every 28 sold. Consider this another way, you buy your vodka in cases of 6 from your supplier; for every 4 cases you buy throw one bottle down the drain immediately…!

There is not much imagination needed to see how the carelessness captured in these pictures can rapidly lead to significant shortages in your spirits, immediately hitting your cash margin and gross profit percentage. Add to this negligence the prevalence of over-pouring measures in to cocktails, and you could build up major losses over just a couple of weeks.

Energy flows where attention goes. What you focus on grows. Team attention to detail, shift management spot checks, and our accurate methodical stocktake process can eliminate this shrinkage problem rapidly.
